The Bilsteins are stiffer and are designed with the heavier weight of the turbo motor.
The UK NA shocks and springs are softer and use a bit less springrate due to the na motor being lighter.

As above, but if you're looking at a used set bear in mind they are 20 years old, and will be pretty xxxxx.

Shocks don't have an influence on ride height.
