power steering confusion? please help me

A nonfunctional power steering system is an MOT failure, and the fluid is meant to be gold, it's EHPS fluid. Traditional PS systems can use auto transmission fluid which is red but electro systems need the gold stuff.

how do i drain all the fluid from the rack, so i can put fresh in when i have changed the pump?
