Engine starts from cold & runs well, accelerates strongly, etc
BUT
When it reaches full running temperature it stalls at tickover revs
Any ideas please ?

Yes, opened idle air bleed a few turns
Engine now not stalling when hot
BUT
It hunts between about 1100 & 1800 revs when hot
Changed coolant recently but i think its fully bled out now

Keep bleeding. And when you're done, bleed some more!
Air trapped in the coolant going to the waxstat giving it too much bypass air when hot, as said above bleed it out.
You can test the waxstat as the culprit by blocking off the 5p sized hole inside the throttle body with your finger, the revs should drop to 800-900.
Or fit a manual choke then loop off the feed lines to the throttle body as, other than the filler cap, that's the highest point that the coolant reaches in the engine bay. Makes bleeding the coolant a lot easier and the air isn't heated up as much (debatable benefit).
Another tip, when setting the idle with the idle screw make sure everything electrical including lights, blowers etc is turned off. Made this mistake before and revs kept dropping too low.
