where can i take the temp from for an oil temp gauge?

Best place would be from the sump, most accurate.
Others will tell you to use a sandwich plate... they will then say how they are running one without any problems... etc
I tried one to begin with... they suffer from heat transfer and leave you with an inaccurate reading.

hmm sump is coming off in july anyways as im doing the oil pump so ideal time to play.
when you say through the sump plug did you drill and tap it? or is the sump good enough to drill and weld in a tapped plug to then thread the sensor into?

ive used a t piece in the oil pressure sensor location.

I got a hollow sump plug from demon tweaks I think then you just put your sensor through the middle

maybe so, but im not really bothered about knowing the specific temperature, i just want to know if the engine oil is getting too hot. ive never seen it read over 80, even on track. so if i see it getting up to about 100, even with heat soak, ill know its time to stop.

Sandwich plates are useful but do suffer from heatsoak on a rev1/2 engine due to how close the sensor is to the downpipe. I've got mine in a remote filter housing on the suspension turret. Seems to be vvery accurate now compared to the sandwich plate.

1 more question, i need another sensor. would a different aftermarket sensor work with the defi setup?

unlikely. I switched a sensor and gauge didn't work. Wasn't defi, but I would think they would be even more bespoke.
