[Mk2] [Generic] New Head Unit Recommendations and Installation

Looking to swap out the stock head unit and would like some pointers to make sure everything works when it goes in.

Currently, have a full stock premium sound system and would rather not swap out the speakers/amps - Looking at this link, it seems that I need a head unit with 2 RCA's where the rear RCA goes to an amp and split into the rear and sub speakers.

Any other things I should look out for in a head unit?
Would a unit with 3 RCA's be okay (what would I do with the Sub RCA?)
