Up until about 2003/4 they were 15" all round, then they changed to 15" front and 16" rear.

I take it you have 15s all round? I would imagine 15s and 16s on a mk1 might look a bit odd?

Yes I've got the 15's around, I've often wondered what the MK1 would look like with 16's on the rear, one down side would be that to keep the RR more or less correct you would have to go for 195 x 45's on the rear and they are a lot more expensive than 195 x 50's

would a set of 17" 8j front 9j rears with offsets of 31 and 37 respectively fit a mk2 at all??

If Mk2 offset is supposed to be 35 - 38 why do the OE wheels state offset of 45?
OE wheels are 6 & 7" wide 15" 45 off set - the 35 - 38 off set relates to a wider rim the more modern fitment. 7 & 8" popular with 16" wheels.

Yes.Might just clear the stock front shocks or might need 3 - 5 mm spacers to clear tein coilovers or the inner side of the rim edge. 31 on a 8" front is quite aggressive and most likey would make contact on the outer arch of the wing- fender,especially if the tyre profile is higher than 40. 225 - 35 - 17" is ideal as it is lower than a 215 - 40 - 17".
Falken GRB 452 that is which offers more clearance and a lower sloping shoulder design etc. 35 would offer a better clearance away from the outer fender wing edge.Or 38. The rear 37 will be near perfect and can run 235 - 40 -17" *245 - 35 - 17"* which is perfect and nearly the OE rolling radius size.245 - 40 - 17" is a bit taller and on low set car might contact the fender edge. The 35 profile is well clear on low cars.

Two or three main areas to consider 1) wheel size 2) clearance 3) rear wheel driven speedo accuracy
Focus on the wheel size with tyre:-
Stock wheels are 23" front & 24" rear - tall/height
Here are some comparative examples quite close to the stock sizes
225 - 35 - 17" & 245 - 35 - 17" - F&R
215 - 40 - 16" & 225 - 45 - 16" - F&R
We currently run:-
215 - 40 - 16" - 7.5" wide rim - off set 37 & 245 - 35 - 17" - 8.5" wide rim - offset 37 mm.
In effect this is the same height as the stock 15" wheels.
Previous wheels we ran were:-
225 - 35 - 17" 8" wide rim - off set 35 & 245 - 35 - 18" 9" wide rim - off set 38.
Here the rear wheel was now one inch taller than stock. 23" with (25".)
The inch taller meant the wheel was closer to the rear fender arch looked good
but was prone to contact during heavy cornering on a low set car - rolling the arches was a solution.
Bearing in mind this was a wide 9" rim.
OR use:- 245 - 35 - 17 for example.

Nicked this out the back of a Rays Catalog - Ive put a green blob next to cars that have exactly same PCD, number of holes and bore as a SW20 ie. 114.3, 5, 60 and an orange one against cars that have same pcd and number of holes but a bore size that is too big so hopefully with spigot rings they could still fit.
Obviously you still have to consider other things like offset etc but its ice to know what other cars have similar wheel fitment

Aren't the speedo readings from the gear box so not an issue with wheels sizes, on that count anyway...

Count the number of wheel bolts on each and youll have your answer! :-)
