Since I had to ask, and other people didnt know, I have made a complete guide to stowing a Mk1 sunroof.
First open the front boot, then squeeze the metal part of the catch to release the lever from the body of the car.
Push the roof up with one hand while undoing this safety catch on the drivers side.
Gently ease the roof out, freeing the metal tabs from the hinge, and letting the metal spoiler raise up. This keeps the airflow smooth while the roof is out.
Carry the roof to the front boot, and rest it on the trim. Squeeze the metal part of the lever again and locate the lugs into the bracket provided on the roof. This will leave the lever sticking out, but solid.
Rest the roof on top of the bulkhead brackets, look underneath and make sure the metal tabs on the roof slide underneath the bracket as shown. Undo the cream coloured catch and lower the lever down to rest on the soft bit, then secure it with the catch. The roof now should not lift up.
Stand back and admire your handiwork whilst ignoring the need to wash your car before closing the bonnet
